Chicken with garam masala

Originally a Madhur this recipe is an old favourite. It tastes so fresh and healthy.

Ingredients;

tbs oil

1 Onion chopped

6-8 garlic cloves

inch ginger

bay leaves

curry or lime leaves

tbs cardamon pod

tbs cumin seeds

2 inch cinnamon stick

tsp cloves

breast chicken

tin toms

tbs garam masala

s & p to taste

Method;

Turn hob on high, add oil to pan or casserole dish, when smoking add onions, crushed garlic and finely chopped ginger. Add all spices and leaves minus garam masala. add chunks of chicken, lightly brown. Add toms and bring to boil. Turn low add salt and pepper and leave for 20 mins. Add garam massala.  Serve with basmati rice and/or Rita and naan.
