This is a loose interpretation of something I had once at the The Mayburry in Woking.

1-2 Duck breasts

2 tbs hoisin

pickled ginger (for sushi, easily available from chinatown)

mange tout

carrot (grated)

beetroot (grated)

tenderstem broccolli

bean sprouts

baby gem lettuce

nest egg noodles if you want something more filling

Marinade duck in hoisin 1hr min. score skin. pan fry in hot oil skin side down until golden and drisp 5-10 mins. Turn and cook for 5 on other side. Duck can and should be a little pink (think of it in the middle like pork and not chicken which cant be nor beef which has to be pink). Blanch broccoli  bean sprouts and mange tout for 1-2 mins, plunge into gold water, serve with the carrot betroot and ginger baby gem leaves. Finally toast sesame seeds and sprinkle with fresh or frozen coriander. mix mirinor rice, hoisin, lime and sesame oil for dressing
