Perfect when you want to impress but don’t fancy too much hassle. this combines all the lovely flavours of the middle east; cumin, olive oil, lemon juice, fresh coriander, mint, lamb, pomegranate seeds, yoghurt and garlic.
Mix in a large Pyrex/glass bowl and mould into patties onto wood or metal sticks. Shallow fry. Add Tzatziki to serve.
Roast Aubergine for 10-15. Scoop outr flesh and mash with other ingredients. Sprinkle pomegranate seeds and cayenne.

Mix, need and prove as usual. Cook in gridle pan with dash oil. aim to get tiny blak patches.
Greek yoghurt plain four seasoning Mix then need as normal. Leave to prove. Cut into chunks and roll out. Dust flour. Cook in griddle pan with dash olive oil.
